When applying for jobs should I answer questions about race and gender?

I recently started applying for jobs. I have noticed that a lot of companies that have online application processes ask for race and gender, and they claim to be an equal opportunity employer, blah, blah, blah. They always say it is not required, but I fill it out anyway. I am a white female. Even when they say they are an equal opportunity employer, they may be looking for a male or someone with a different ethnic background to diversify their staff. Right? Is it possible that I am shooting myself in the foot by completing these questions?
